Roni’s Oven-Baked Fish – A Taste of the Adriatic

Croatia is well known for its long and proud fishing tradition, and life by the sea has always shaped our cuisine. Our boat, Tornado Blue, is a traditional fishing boat that was used for many years by local fishermen. Today, although we no longer fish ourselves, we continue this tradition by buying fresh fish directly from our local fisherman Nikola, ensuring the best quality for our meals on board.

One of Roni’s favorite dishes is oven-baked hake with potatoes and carrots. It’s simple, honest, and full of flavor—just the way coastal cooking should be. Below, Roni shares how you can prepare this delicious fish dish at home.

Ingridients

Ingredients (for 4 persons)

  • 4 fresh fish (hake), about 350 g each

  • 1 kg potatoes

  • 250 g carrots

  • 4 cloves of garlic

  • Salt and pepper

  • 2 dl white wine

  • 1 dl olive oil

  • 2 dl water

  • 1 teaspoon Vegeta

  • Fresh parsley (for serving)

If fresh hake is not available, you can also use sea bass or gilt-head bream.

Instructions

1. Prepare the vegetables
Peel the potatoes and carrots and cut them into evenly sized cubes. Place them in a baking dish and mix with olive oil, salt, pepper, Vegeta, and water until everything is well coated.

2. Bake the vegetables
Place the dish in a preheated oven at 200°C and bake for about 1 hour. During this time, the water will slowly evaporate and the potatoes will become almost tender.

3. Prepare the fish
While the vegetables are baking, clean the fish and season the inside with salt.

4. Add the fish
Once the potatoes are nearly ready, place the fish on top of the vegetables. Drizzle one soup spoon of olive oil over each fish and pour the white wine over the potatoes.

5. Bake until ready
Return the dish to the oven and bake for about 30 minutes. The fish is ready when the eyes turn white and the flesh is tender.

Serving Suggestions

Serve the dish warm, sprinkled with freshly chopped parsley for decoration. If you like, you can also prepare a simple sauce made from sliced garlic, olive oil, and fresh parsley to spoon over the fish before serving.
