Roni makes the most delicious pancakes on the boat, and our guests always ask for his secret. Now, you can try them at home! These pancakes are thin, slightly crispy on the edges, and perfect with homemade jam, chocolate, or a splash of Kruškovac liqueur for adults.

Ingridients

Ingredients (for about 10-15 pancakes)

  • 2 eggs (from domestic chickens)

  • A pinch of salt

  • 1 teaspoon sugar

  • 1 packet vanilla sugar

  • Zest of 1 lemon

  • 20 ml (0.02 l) Rum (optional; omit for children)

  • 0.5 kg white flour

  • 0.5 liters milk

  • Sparkling mineral water (a splash to loosen batter before cooking)

  • Vegetable oil or butter (for cooking)

  • Homemade jam (for filling)

  • Kruškovac liqueur (for adults, optional)

  • Nutella or sugar (optional, for children)

Instructions

  1. Mix the wet ingredients:
    In a bowl, beat the eggs with a pinch of salt, sugar, vanilla sugar, lemon zest, and rum.

  2. Add flour and milk:
    Gradually mix in the flour and milk until smooth.

  3. Chill the batter:
    Cover the batter and place it in the refrigerator for a few hours. This helps the flavors develop and makes the pancakes easier to handle.

  4. Prepare for cooking:
    Before frying, add a splash of sparkling mineral water to make the batter slightly more liquid.

  5. Cook the pancakes:
    Heat a non-stick pan with a little vegetable oil or butter. Pour in the batter, spreading it thinly. Cook until the edges are slightly brown, then flip and cook the other side. Repeat until all batter is used.

  6. Fill and serve:
    Spread Lili’s homemade jam inside each pancake. For adults, drizzle a small amount of Kruškovac liqueur before serving. For children, use Nutella or simply sprinkle sugar.
