Anchovies, often prepared together with sardines, belong to the so-called blue fish. This type of fish lives closer to the sea surface and moves in large groups. Traditionally, blue fish is caught by special fishing boats that use strong lamps at night. The light attracts the fish to the surface, making it easier to gather them into nets.
Anchovies and sardines can be eaten fried or grilled, but the most traditional way to preserve them dates back to Roman times. They are layered in salt and left to mature for at least nine months. During this time, the fish develops its deep, rich flavor and delicate texture.

2. Arrange the dish

3. Add the flavors
He drizzles the fillets with Dalmatian extra virgin olive oil, adds finely sliced red onion, and finishes with a touch of freshly ground pepper. Finally, he spoons the wine vinaigrette evenly over the fish.
4. Let it rest
Roni recommends letting the dish rest for at least 30 minutes before serving. This allows the anchovies to absorb the marinade fully and balance all the flavors.
